Yama's Made-to-Order Sushi Debuts in The Lobby Lounge
at The Ritz-Carlton, Kapalua
The Ritz-Carlton, Kapalua introduces The Sushi Bar, nestled into The Lobby Lounge Bar overlooking terraced lawns and the Pacific Ocean. Sushi Chef Yama combines fresh island seafood and produce with more than 26 years of experience nightly from 5 to 8 p.m.
Chef Yama's menu includes more than 20 variations of the two most popular types of sushi: Nigiri-sushi, finger-sized pieces of fish pressed onto rice delicately flavored with rice vinegar, salt and sugar; Maki-sushi, rice pressed on seaweed and topped with various fresh produce and fish, rolled and then cut into bite-size pieces; and Sashimi, expertly trimmed fish.
Sushi is as much an artform as a cuisine; it should be as pleasing to look at as it is to taste. Ornate Japanese china and traditional Japanese place settings accompany the artistic presentations.
Chef Yama studied sushi preparations in Japan then traveled to Alaska and Europe before landing on Maui where he was at Kobe's in Lahaina for six years.
Sake, Japanese beer and The Lobby Bar service complement the made-to-order delicacies that begin at $4 per serving. A Hawaiian duo plays in The Lobby Lounge Tuesday through Saturday from 4:30 to 7:30 p.m. Pianist Gilbert Emata performs solo Sunday through Thursday from 8 to 11 p.m. and the soothing sounds of pianist Sal Godinez and vocalist Missy Ventenilla are featured Friday and Saturday evenings from 8 to 11 p.m.
